We woke up to 5-6 inches of snow and negative temperatures this morning in Denver! Brrr!!
Thankfully my fiance and I both have jobs that allow us to work remotely, so we stayed bundled up at home with the fire place!
I'm currently on Day 5 of ketogenic eating and my Core De Force workout program. Usually I have to grab hard boiled eggs, a fatty protein shake, something quick and easy to have when I get to work. So I decided to spoil us a little this morning with a fresh made breakfast!
I had pinned a recipe from a blog called "What's that Smell" and I figured this morning was a perfect morning to try it out!

This was definitely a little time consuming, not something that I could whip up before heading to work, but since today is a work-from-home day, it wasn't too bad!
You just scramble up 18 eggs with salt and pepper to taste, scoop them out into a separate bowl and brown 1 lb of pork sausage in the same pan.
This would be a good time to pre-heat your oven to 325F!
When the sausage is browned, stir in 1.5 cups of beef broth and 16 oz of softened cream cheese. Continuously stir on a medium heat until it starts to thicken. Then simmer on low for 2-3 more minutes, still stirring continuously.
In a 9x13 pan, start layering your lasagna with 1/4 of the sausage gravy mixture, then layer 1/3 lb of ham, 1/2 of your scrambled eggs, 1/3 of your cheese, 1/4 sausage gravy mixture, 1/3 lb of ham, the rest of your scrambled eggs, 1/3 of your cheese, 1/4 sausage gravy mixture, the rest of your ham, the rest of your sausage gravy mixture and top it with the remaining cheese!
Bake at 325F for 30-40 minutes and allow to cool for 10 minutes or so before serving.
So yum! Even my fiance, who is blessed with a super fast metabolism, thought this was delicious! He even went back for seconds... I call that a win!

Ingredients:
For the scrambled eggs:
18 eggs
salt and pepper to taste
For the sausage gravy:
1lb pork sausage
16 oz cream cheese
1.5 cup beef broth
salt and pepper to taste
For the lasagna:
1 lb ham (I used spiral cut, but the recipe calls for deli ham)
8 oz Italian shredded cheese
Makes 12 servings, per serving:
394 calories 30g fat 4g carbs 0g fiber 27g protein
