Peanut Butter Brownie #KetoApproved

My fiance is a picky eater when it comes to desserts. Not picky as in "I only eat chocolate things" or "I only like this type of ice cream," but more like "I only like full-of-guilt, real treats"

He was playing some video games when I was in the kitchen whipping these up, so he didn't see the Truvia baking blend or coconut flour being used. When I brought him in a slice, he said "Um, didn't you have your cheat meal yesterday?"

Um, number one... better be careful! Number two... jokes on you, because they're keto!

These are so easy too! Just melt 2.25 tbsp butter with 1-1.5 tbsp unsweetened cocoa powder and 1 tbsp chocolate pb2. I did this in the microwave, which worked perfectly!

In a separate bowl combine 3 eggs, 1/4 cup Truvia baking blend, 2 tbsp unsweetened vanilla almond milk, and a pinch of salt.. then stir in the butter mixture and add 1/4 cup coconut flour and 1/4 tsp baking bowder. Bake at 350F for 15-20 minutes.

While these are cooling, whip together 2 oz room temperature butter, 4 oz room temperature cream cheese, 4 tbsp heavy whipping cream, 2 tbsp vanilla extract, and 2 tsp truvia baking blend in your stand mixer (or you can use a hand mixer!)

I topped my brownies with the cream cheese icing and sprinkled on a little more PB2!

Ingredients:

Brownie:

2.25 tbsp butter

1-1.5 tbsp unsweetened cocoa powder

1 tbsp chocolate pb2

3 eggs

1/4 cup Truvia baking blend (You can get it here!)

2 tbsp unsweetened vanilla almond milk

a pinch of salt

1/4 cup coconut flour

1/4 tsp baking bowder

Cream Cheese Icing:

2 oz room temperature butter

4 oz room temperature cream cheese

4 tbsp heavy whipping cream

2 tbsp vanilla extract

2 tsp truvia baking blend
