When I told my fiance about going back to ketogenic eating for the month of January, I could tell he was a little bummed at first. I do all of our grocery shopping and cook all of our food, so I could tell he was going to start missing my rice filled, carb loaded casseroles that I have been making lately.
But that all changed when I told him I was making my Keto Scotch Eggs for breakfast!
I transitioned off of ketogenic eating 2 years ago with a transition to Beachbody programs, so these must of made quite the impression if he remembered them after 2 years!
What makes these even better, is that they are a simple 2 ingredient breakfast and very quick to whip up if you already have hard boiled eggs on hand!
All you need is 6 peeled hard boiled eggs and a 1 pound log of raw breakfast sausage!
I usually dry off my hard boiled eggs as best as I can with a paper towel before starting and allow the hard boiled eggs to sit on a dry paper towel while I prep! Dry eggs are SO much easier to work with!
I cut my breakfast sausage into 6 equal servings and set that aside.
Take one of the sausage servings and flatten it in between your hands. You'll want it to be a giant circle, a little bigger than the size of your palm.
Then place one of the hard boiled eggs in the middle of the sausage circle and wrap the sausage around the egg.
I usually play with the sausage covered egg, squeezing lightly and moving it around in my hands... kind of like playing with play dough!
Once all of the eggs are covered, place them on a foil lined pan that has a little lip. I usually use my 9x13 pan for this!
Bake for 25-30 minutes at 400F, flipping half way.
