Back in my first round of Ketogenic eating (two years ago), I discovered this AMAZING fat bomb of a pie!
I was not really a huge fan of the traditional fat bombs that I had attempted to make, because let's be real.. eating basically coconut oil or butter straight is not so delicious...
Well, definitely not as delicious as creamy, heavy whipping cream whipped with softened cream cheese and sugar free jello mix.
My practically had to pry the mixing spoon from my non-ketogenic eating fiance's hand.. yup, it's THAT good!
Even better, it's such a simple recipe! Only 3 ingredients and it takes less than 5 minutes... if you have a mixer, of course!
All you do is throw 8 oz of softened cream cheese into your mixing bowl and put the stir setting on a low-medium speed.
Slowly add in 1 1/2 cups of heavy whipping cream.
Once combined, slowly dump in 1 packet of sugar free jello mix of whatever flavor your heart desires. We used sugar free strawberry jello mix! Then once the jello mix has been fully mixed in, turn up your mixer to a high speed until stiff peeks form.
I didn't make a crust, but you can easily put a keto crust with this! Maybe some day I will attempt one... they kind of seem intimidating, even though I'm pretty sure you can just use butter and almonds!
So simple, so quick, and SO delicious!
Ingredients:
8 oz softened cream cheese
1 1/2 cups heavy whipping cream
1 packet sugar free jello mix
Makes 8 servings
